We have experimented with many different flours over the past few years. Among our favorites is almond flour and coconut flour. The taste is delicious, but the problem is that these gluten free flours can behave differently than wheat flour. For this reason, we have decided to include many “cup-for-cup” flours in the list below. These are gluten free flour blends that can be used as a direct substitute for white flour, meaning you can sub it into your glutenous recipes to turn them gluten free–without having to understand (or modify) the chemistry behind it.
